Scotsman's (thimble-shaped) gourmet ice cubes are pure, hard, compact (without holes), crystal clear and easy to melt. Gourmet ice cubes are formed by spraying water onto a supercooled horizontal evaporator. While the purest water molecules freeze first into ice cubes, fresh water is sprayed to rinse away the unfrozen water minerals, preventing clouding of the newly formed ice. The minerals are collected in the water collection container and then removed together with the rinse water before a new freezing cycle is started. The Gourmet ice cubes are therefore purer than the water from which they are made!

- The rounded corners provide a stylish, modern visual appeal. The greatly improved accessibility ensures easy cleaning.
- The ice bunker door on the front panel, completely with modern shapes, slides smoothly over the guides and when closed gently bumps against two rubber layers that dampen the light.
- For greater convenience and hygiene, the ice cube scoop can now be stored in a special holder inside the storage bunker.
- The same housing houses the alarm that sounds when too much dust or grease has accumulated on the condenser air filter. In addition, the alarm also notifies the operator when the device is due for a cleaning cycle.
- Next to the ice bunker door there is an active antimicrobial vapor sachet with gradual release. To maintain the hygiene of the ice in the ice bunker, you only need to replace the bag regularly.
- Thanks to the unique PWD system, which ensures progressive water drainage, you don't have to worry about the distance or height of the drain and your ice stays out of the reach of algae or microbes present in stagnant drain water.
- Hygiene is crucial in storing ice. Scotsman offers you a simple but efficient system that allows you to apply the utmost hygiene without compromise: the use of a food-safe antimicrobial component stored in a pouch, located behind the bunker door. It is therefore sufficient to replace the pouch containing the antimicrobial agent at regular intervals to keep the supply of ice cubes as hygienic as possible.
- The anti-limescale system patented by Scotsman efficiently limits mineral deposits in the water pipes and in the sprinkler system. The rubber cap collects and manually removes the minerals that spontaneously accumulate in the water during the freezing and icing cycles. By performing this quick and simple action regularly, your Scotsman Gourmet ice cubes will retain their clarity and perfect shape.
Technology
Condenser air filter
To avoid a steady decline in ice production, the condenser air filter must not be obstructed by dust accumulation. Scotsman's 6 Series air-cooled machines are all equipped with an air filter located near the condenser to prevent dust accumulation. You can remove the particularly high-performance and user-friendly filter in an instant via the front of the device; the “Clean me” indicator light lights up when the filter needs to be cleaned. Removing and then rinsing the filter under the tap is easy!
ESS: Energy saving system
The ESS system optimizes the effectiveness of the ice production cycles and therefore ensures better ice quality in combination with reduced energy costs.
HSS: Horizontal sprinkler system
Minerals, which are usually present in water, affect the clarity of the ice and can give rise to unattractive white ice cubes. Scotsman's HSS system sprays water onto the horizontal evaporator, converting only the purest water into ice: the result is solid, slowly melting crystal clear ice cubes.
WPS: Water cleaning system
During the freezing process, the purest water freezes in an initial phase, after which the remaining water and minerals flow back to the water collection container. The water cleaning system always rinses the water collector before starting a new production cycle, ensuring crystal clear ice cubes for the entire life of the machine.
THC: Concept Total Hygiene

Damped door closure
The door of an ice bunker containing the ice cubes must always remain closed for hygienic reasons. The sound-dampening rubber inserts soften the noise when the ice falls into the storage bunker after the icing cycle, extending the life of the door lock mechanism.
ACC: Adaptive cycle management
Ambient temperature fluctuations or unusual ambient temperatures affect both ice production and its quality. Scotsman's adaptive cycle management electronically adjusts both the freeze formation cycle and the capture cycle to ambient and water temperature; machine functions for fine adjustment that ensure the best performance and the production of ice cubes of the highest possible ice quality.
